Trusting in the Lord

Being a stay at home mom is probably one of the toughest jobs that I have ever experienced. I am sure that most moms can agree with that statement. Those who know me know that I have pretty much worked consistently as an Administrative Assistant my whole married life. I was once a Military Wife and some days a deployment sounded like a breeze compared to the kinds of days I’ve had. About 6 years into my marriage my husband and I decided to have children once he got home from his last and final deployment. We got pregnant within a weeks of trying, and when we had Aidyn. All I can say is that it was tough at first being a first time mom and all; I got the hang of it, it started to get easier the more acquainted we got and the older he got. He was such a beautiful baby boy I was obsessed and would not let him out of my sight and I could not stop staring at him and just had so much love and joy for a life that I created, and I couldn’t believe that I was capable of creating such a beautiful innocent life. I thanked God everyday for allowing us to be blessed with Aidyn in our life.

My husband and I had discussed previously that we wanted our children to have that “magical” two year gap, so they would be close in age and still somewhat be interested in the same things, and such. Now that Aidyn was at an age that we had to decide to let him to be an only child or allow him to have a sibling, and since Aidyn was such an easy baby to care for… why not have another? So, we prayed and asked God to add another blessing to our life, and decided to try for another, although it took us a year and a half to get pregnant again (we did lose hope after a year that I couldn’t get pregnant again) during that year we prayed and prayed and had to trust in the Lord to bless us with another baby to add to our small little family.

After months of trying, and about 12 pregnancy tests later (I also had irregular cycles, so any late or missed cycles kept me on my toes) we sort of gave up and the thought of having (but I was still praying) another baby faded and I just figured that was not what God had planned for us, and just let it go. Although a family of three was ok, but I wanted a family of four to balance us out. The months went by and we went on with our lives and I wasn’t obsessed anymore about adding another one to our family… it was on Mother’s day 2011 I woke up craving irregular food (I woke up that morning wanting fried chicken and pancakes) and spent the day constantly eating and my appetite was out of control and I got the nudge to take a pregnancy test, and I finally gave in and took one that evening and since the first one came out positive and I ended up taking three, and all 3 of the tests I took were positive!!! I would have to say that this was a moment in my life that I would NEVER forget and it was truly a personal gift from God that I would never forget. He surprised me on Mothers day of all days, and I don’t think a gift could top this one unless I won the lottery on my birthday! My husband even joked and told me that God one upped him on his gift… HaHa!

I trusted in the Lord and I NEVER gave up faith, trust or hope and he gave me the gift of life. He blessed our family with the most precious, beautiful, smart, and wonderful little girl a family could ask for. Although I was discouraged at times I knew that I had to pray consistently and continue to remind God that this was what I wanted and I wanted to add another precious life to our growing family. Although being a mother of two little children was a rude awakening and tougher than I could have thought… As the days turned into months I adapted to our new lifestyle and I of course have tough days, but the happier days outweigh the tough days for the most part, but I would not trade it for the world this was what I asked for and I am grateful to be a mother of two of my one-of-a-kind creations.

So, if you are in a situation and it seems as though there is no hope, or if you are in a dark place and need some light, just pray and TRUST in the Lord to get you out of what situation you are in. I trusted in the Lord and I continued to remind him that this is what I wanted and granted it wasn’t on my time, because I wanted to be pregnant immediately like I was with Aidyn, and not a year and a half down the road. I was his timing and he answered my prayers. He proved to me that he was there and he was listening to me and that I needed to rely on him and prove that I was worthy of his blessing. Now that my family is complete, and somewhat perfect I couldn’t ask for more.

Just trust in the Lord and he can do amazing things in your life I am a living testimony of it. Now that I am a mother of two, and a full time stay at home mom it has truly brought me closer to God, because no matter what I am dealing with whether it is spilled juice on the counter or two hungry kids screaming at me for their lunch and can’t wait five minutes for the oven to bake their corn dogs I just close my eyes and ask God for his strength and I honestly pray to him twenty times a day, because I have learned that he is my crutch and he gives me peace when it seems as though I am in the middle of a tornado… He truly cares about you and all you have to do is trust and have faith in him.

 

Prayer:

Lord, I know that you are amazing and you have shown me countless blessings in my life and I know that you are there listening to me and I know that you will never leave me nor forsake me.  I trust that you will answer my prayers and do what is best for me in my life here on earth.  -Amen

Fancy Buttercream / Fondant Floral Cupcakes

Fancy Bridal Shower Cupcakes 1 Fancy Bridal Shower Cupcakes 2In Honor of Frosting Fridays I have decided to share with you one of my favorite cupcakes that I have ever done… I did these cupcakes for a good friend of mine who recently got married and I did them for her Bridal Shower. The flowers were all made of fondant and I embellished them with pearl sprinkles and buttercream frosting.

The Fondant Roses were so incredibly easy that my 4 year old was helping me do them. I used a 1M Wilton tip for the buttercream frosting and I also used Wilton Fondant for the roses and flowers and embellished them with Wilton Pearl Sprinkles.

S’more Cupcakes

I am at it again and since I am a  stay at home mom with the desire to Bake it has recently taken off and I have made it a hobby of mine that I find to be therapeutic! I love to bake and that is why I decided to add Frosting Fridays to my blog! I am hoping that I can add a new baked good to my blog weekly (Lord Willing!)… Since it is the beginning of Spring I thought I would start frosting Fridays with one of my favorite Cupcakes the S’more Cupcake and they are delicious!

Please see below for tools & Ingredients.

 I just used the Following Ingredients and Tools:

Tools:
Cupcake Pan
Cupcake Liners (I preferred to use the foil ones to give it the outdoors look)
 A 1M Wilton tip for the frosting
A Frosting Bag
A butter knife or large eating spoon to spoon in the frosting from container into the Frosting Bag.

Ingredients:
1 box of chocolate Cake mix (your preference)
The Ingredients that the box of cake mix you chose requires
Buttercream or Vanilla Frosting
Graham Crackers
 Marshmallows (Mini for the topping)
Hershey’s Chocolate Bars (you can use kisses if you like, but I prefer the bars to be even with the Graham Crackers)

Side Note: You can also spoon out the middle of the Cupcake 5 minutes after they are out of the oven and put a large marshmallow in the center and while they are cooling it will soften the marshmallow and you have a marshmallow surprise when you bite into it. Then simply frost the cupcake and the frosting will cover the marshmallow.

Cheesy Chicken Enchilada Pasta Recipe

So I am happy to be back in action and this time I hope that I will be more dedicated to my blog (at least that was my new Years resolution), so we will see how that goes, since I am a SAHM and a dedicated wife that usually leaves no time for me, but I enjoy writing and sharing things with all of my readers, so I hope I can make the time to keep my blog pretty updated.

Anyway… For all of you that do not know I reside in Milwaukee Wisconsin and the winter this year has been EXTRMELY Frigid and EXTRMELY Cold! As I am typing this page let’s just say that it is -7 outside and with the wind-chill it is about -30. Did I mention it was cold? Since it has been so cold I have been trying new recipes and lot of comfort food to forget about the treacherous weather outside, so as I was trying to think about the question every SAHM asks herself in the mornings… What should I make for Dinner? I stumbled across this meal on Pinterest  (My FAVORITE place to go to get recipes) and  my-my-my have I found another great recipe. This is a family favorite meal for sure. It is called Cheesy Chicken Enchilada Bake and my family LOVES it including the kids! The sauce is so creamy and perfect it was restaurant style and it was hard to believe that I was able to make it! It was so delicious that I went into Food Coma because I ate so much of it. Since I have found this recipe (which was about 3 weeks ago) I have made it 4 times… Needless to say I AM OBSESSED! So I wanted to share it with all of you! If you do end up trying it please let me know how you like it and share your opinions with me, because I am always curious to see if I relate with my readers!

Hose Basket re-purposed as a Fruit Basket

Good Afternoon all!

In my Kitchen I have limited counter space and I HATE THINGS on my counter if they don’t need to be there, so I am always looking for ways to keep my counter clean. I had a fruit basket that was free standing, and it was always in the way and falling off the counter plus it was not big enough for us, and fruit would fall out… it was a hot mess!!!! (Here is the picture of my old Fruit Basket. I plan to re-purpose my fruit basket later… stay tuned for that)

So, as always I hit the internet and did not find anything I liked. So, I allowed my mind to do what it does best and thought of things to use instead of the one I had. Then I had an AHA Moment! I remember being at Target a few weeks ago and remembered seeing this little guy:

So I went to Target and bought it and brought it home… I had to make a few changes and add some Black Grip Beaded Shelf Liner (you can almost get this anywhere like Walmart & Target)

to the bottom of it, so the fruit wouldn’t fall through all I did was use my hot glue gun and trace the bottom of the fruit basket onto the liner and cut it, then glued it. Then I installed it and added my fruit and Ta-Da I got this:

BTW: This project only cost me under $25.

Future Skinny Mom

I know, I know it has been a while since I have written, but I have a great excuse! Want to hear it? Well I will tell you…. It’s my kids they are time suckers, but the truth of the matter is that I am a dedicated mother and I allow my personal time to slip away if it benefits my children. Plus it is summer time and I am enjoying the warm heat before the cold winter is here before I know it!

Something that is new about me is that I am now a clean eater I am trying my best to cut a lot of the junk food out of my diet and I am also trying to make time to exercise and hopefully shed about 25lbs before the year is over. We shall see. So since it is recipe Tuesday I have a couple of new “clean eating” recipes one dinner and one dessert that I would like to share with all of you. I had it them other day and it was AMAZING. I hope all of you are able to try it and like it as much as my family and I did!

Grilled Cilantro Chicken with Pickled Tomato and Avocado Salsa

Ingredients

  • Salsa
  • 1 pound medium beefsteak-type tomatoes, quartered, seeds squeezed out
  • 2 serrano chiles, thinly sliced
  • 1/2 cup thinly sliced green onions
  • 1/2 cup distilled white vinegar
  • 2 1/2 tablespoons packed light or dark brown sugar
  • 1 1/2 teaspoons kosher salt
  • 4 teaspoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 2 teaspoons mustard seeds
  • 2 teaspoons freshly cracked black pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne
  • 1/2 teaspoon turmeric
  • 1/2 cup extra-virgin olive oil
  • 2 firm-ripe avocados, cut into 3/4-in. chunks
  • Chicken
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lime juice
  • 1/2 cup chopped cilantro
  • 1 tablespoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 chicken breast halves with bone and skin (2 1/2 lbs. total)

Preparation

  1. 1. Make salsa: In a bowl, combine tomatoes, chiles, and green onions. In a medium saucepan over high heat, bring vinegar to a boil. Add sugar and salt and cook, stirring, until dissolved, about 1 minute. Remove from heat. Put ginger, garlic, and dry spices in a bowl. In another medium saucepan, heat olive oil over medium-high heat until rippling. Add ginger mixture and cook, stirring, until fragrant, 1 minute. Remove from heat, stir in seasoned vinegar, and pour over tomato mixture.
  2. 2. Let salsa cool, then cover and chill at least 1 hour and up to 4 hours. About 1 hour before serving, stir avocados into salsa and bring to room temperature.
  3. 3. Make chicken: In a large bowl, combine olive oil, lime juice, cilantro, cumin, salt, and pepper. Turn chicken in mixture to coat. Let stand at room temperature, turning occasionally, for 30 to 45 minutes.
  4. 4. Prepare a grill for high heat (450° to 550°; you can hold your hand 5 in. above cooking grate only 2 to 4 seconds). Lift chicken from marinade (discard marinade) and grill chicken (cover gas grill), turning often to prevent scorching, until no longer pink in center, 15 to 20 minutes.
  5. 5. Transfer chicken to a platter and spoon salsa on top, saving half of liquid for another use (such as salad dressing).

And Then for Dessert:

Skinny Fudge Brownies

Prep time: 5 minutes

Cook time: 25 minutes

Yield: 12 servings

Serving size: 1/12 of pan

Ingredients

  • 1 cup white flour or substitute with 1 cup whole wheat flour 
  • ½ cup unsweetened cocoa powder 
  • ½ tsp salt 
  • ½ tsp baking soda 
  • 1 tsp baking powder
  • ¼ cup sugar 
  • ¼ cup granulated Splenda 
  • ¼ cup brown sugar 
  • ⅓ cup 1% milk
  • 1 egg slightly beaten
  • 1 egg white slightly beaten
  • 1 cup unsweetened applesauce 
  • 1 tbsp M&Ms for topping

Instructions

  1. Preheat oven to 350 degrees.  Lightly spray pan with non-stick cooking spray.  
  2. In a large bowl, sift together flour, cocoa powder, salt, baking soda, and baking powder.  
  3. In a medium sized bowl, beat sugar, brown sugar, Splenda, milk, egg, egg white, and applesauce with a spoon until well mixed.  
  4. Stir wet mixture into dry mixture until blended.
  5. Spread mixture evenly into pan.  Carefully top mixture with M&Ms before placing in oven.
  6. Bake for 23-25 minutes until edges are brown and toothpick inserted in the center comes out clean.
